We interviewed Patrick Amice, General Manager of the Barr Hill distillery, where he shared a little about his own career inspiration and journey. His passion for the food and beverage industry along with creating a quality customer experience has led him to where he is now and has catered to Barr Hill’s success. Read on to find out more!
How did you get started in the restaurant industry? What was your journey to success?
I’ve been in the food and beverage industry for almost 20 years. I started as a lover of local farms, and beverage/cocktail collector/nerd. I became successful as a leader in this space because of my unwavering commitment to the importance of hospitality and making customer experiences bespoke and wonderful.
What inspired you to open/run a restaurant in Montpelier?
I loved traveling to and visiting VT, and worked closely with the leadership team at Barr Hill as a bartender manager while I was in NJ. I loved the commitment and vision of the brand so much that I moved to VT 4 years ago to help run the hospitality program
What is your unique approach as a restauranteur or chef?
Hospitality and guest experience are what make a dining experience truly special. If you can provide a bespoke experience alongside great local drinks and food and some special touches, you will see guests become lifetime customers and ambassadors.
What is your specialty dish/or a dish that a new person should try at your restaurant?
For drinks, a Barr Hill gin Bee’s Knees is the gateway to our spirit for most people. Enjoying a Bee’s Knees alongside our local farm’s crispy pork belly, with VT maple and Tom Cat gin glaze is a wonderful way to start your experience with Barr Hill!
What’s something great about your restaurant’s guest experience that customers might not see somewhere else?
We offer small plates and cocktails at the first ever James Beard nominated distillery bar. You can also enjoy tours, seasonal pop-up-themed bars, exclusive Barr Hill Spirits, and private events alongside world class hospitality at our Gin Lane location in Montpelier.
How do you feel your restaurant stands out from restaurants in other regions of Vermont?
I think we offer the most unique and exquisite hospitality in the region! Our staff is among the most friendly and well educated in the industry. The bar program has been voted a James Beard finalist, Best cocktails in VT, and best distillery in VT. We work very hard to make sure every customer has an unbelievable experience.
