Member Highlight: Skinny Pancake

We interviewed Maddie Hayes, Marketing Manager at The Skinny Pancake.

How did you get started with Skinny Pancake?

The first Skinny Pancake was served on Wednesday evening of June 4, 2003. The owners, Jonny and Benjy Adler, had no experience, a cart made of wood scraps from their parents’ kitchen flooring, and a junked sailboat trailer that had been crudely outfitted into a flatbed.

Since then, it has been a story of steady growth. 2005 saw the expansion of festival tours throughout New York and New England with our veggie-oil powered school bus ‘Sueno.’ With a deep commitment to serving local foods whenever possible, the Skinny Pancake was welcomed into the Vermont Fresh Network in 2006. Four years after the first creped served, we opened the doors to the first Skinny Pancake on Burlington’s waterfront.

In 2015, we opened at The University of Vermont. In 2018, we launched a location in Quechee, VT, followed by downtown Stowe in 2020. In December 2021, we crossed state lines to open our first New York location in Albany.

Most recently, in November 2024, we opened our first Massachusetts location in Hadley, which felt like a great fit due to its proximity to the Five Colleges area.

 

Any future plans for Skinny Pancake you’d like to share?

We are so excited to announce that next month, we will be opening our second Massachusetts location in the Northshore Mall in Peabody, MA! This opening is a huge milestone for us. We’ve had our sights set on the Boston area for years, but breaking into Beantown is no walk in the park. Opening in Peabody is more than just expanding our footprint—it’s about proving that locally sourced dining can thrive anywhere, even in bustling urban areas like our new home in the Northshore Mall.

Every expansion is a chance to double down on what we stand for: real food, real people, real impact. This crepe crusade is all about bridging the local food divide between states! Every decision to source locally is a step toward showing that growth and sustainability can go hand in hand.

 

What do you like about having your business in Montpelier?

Montpelier is resilient, and having a location in the heart of our little state allows us to connect with people in communities located throughout Central Vermont in more meaningful ways. It gives us the unique opportunity to engage with both locals and visitors seeking an authentic Vermont experience outside the 'big city' of Burlington.
